MANGO-OATS PHIRNI
Ingredients:
Full Fat Milk – 1 litre
Oats – 80 gms
Jaggery – 80 gms
Saffron – 10 to 12 strands
Elaichi powder – 1tsp (3gms)
Fresh Mango Pulp – 150gms
Fresh Mango Diced – 125gms
Chia Seed – ½ tsp
Pistachios chopped – 7 gms

Method:
Dry roast the Oats on a low flame for approximately 2minutes. Cool & grind to make a fine powder. Toast 4-5 Green cardamom pods in a pan and crush them to a powder. Make sure the powder is fine. Heat milk in a heavy-bottomed pan and reduce it to half on low heat for about 30 minutes. After reducing it to half the quantity, add jaggery & allow it to dissolve in it. Add Oats powder and stir immediately using whisk to prevent oats from clumping. Add 10-12 strands of saffron to the mix. Continue reducing on low heat until phirni thickens. Keep stirring continuously. Once it is cooked, add the green cardamom (Elaichi) powder now.Cook until the phirni reaches the right consistency. It should neither be too thick, nor too thin when poured. Turn off the flame & allow it to cool. After Cooling, add fresh mango pulp. It’s ready to serve. Layer it in a jar. Oats Phirni at the bottom layer, then diced mango, Chia seeds, again repeat the same layers depending on the size of the jar. Refrigerate it for 4-5 hours and allow it to set. Garnish with a mint sprig & chopped Pistachios on top.
