FLAVORFUL PINEAPPLE VACHERIN
Pineapple: 1 PC
Dragon fruit: 1 pc
Grape: 1 cup
Sugar: 1.5 Cup
Vodka: ½ small cup
Egg white: 2 PC
Pumpkin seeds: for final decoration
𝑀𝑎𝑘𝑒 𝑓𝑟𝑢𝑖𝑡 𝑓𝑖𝑙𝑙𝑖𝑛𝑔:
Cut the Pineapple from top and bottom, then in a cylinder form remove the center of the pineapple. Then peel the pineapple skin and keep all these parts aside except the center flesh. Dice the pineapple flesh, then dice 1 small cup of each: grapes, ½ of dragon fruit, ¼ of papaya and transfer into a bowl. Add 1 TBSP of sugar and ½ of small cup Vodka. Mix well and keep it cold.
𝑀𝑎𝑘𝑒 𝐼𝑡𝑎𝑙𝑖𝑎𝑛 𝑀𝑒𝑟𝑖𝑛𝑔𝑢𝑒:
Add 1 cup of sugar to a cooking pot, ½ cup of water, boil at 123’C degree, then whisk 2 egg whites while adding this syrup to it slowly. Then add 2 TBSP of sugar while whisking. Transfer the meringue to a piping bag.
Set the pineapple peeled shell on your plate, fill it in with fruit fillings, pipe the meringue on the outer part of the pineapple, and garnish with pumpkin seeds. Blow torch the meringue. Close the pineapple lid and your Flavorful pineapple vacherin is ready. Enjoy.
