Happy New Year! In this video, I show you how to make eggs florentine. It’s a remixed version of traditional eggs Florentine, which is eggs benedict with spinach instead of ham. It’s kind of a casserole-ish dish that’s baked in the oven. No bread involved! Let me know what you think in the comments below!

KETO EGGS FLORENTINE RECIPE:
*2 servings

INGREDIENTS:
4 eggs
5 oz spinach
2 cloves garlic
1-2 tbsp olive oil
½ cup heavy cream
1 oz gruyere cheese
1 oz emmental cheese (or parmeson/white cheddar to substitute)
1-2 tbsp butter

Instructions:
Preheat oven to 375 F. Chop spinach and mince garlic. Set aside. Grate cheese and set aside.

Using a medium pan, heat up the olive oil over medium heat and cook garlic for 3-4 minutes until fragant. Add in the chopped spinach and saute for about 5 minutes until cooked. Set aside.

In a separate saucepan, melt the butter over medium heat and add in the heavy cream. Once it begins to thicken, turn heat down to low and added in the grated cheese. Stir until sauce is thick and creamy.

In a medium sized baking dish, spread the spinach at the bottom of the dish. Next, pour the cheese sauce on top of the spinach. Carve out 4 spaces for the egg and crack eggs into the spaces.

Bake in oven for 12-15 mins. Serve immediately and enjoy!
