BORSH ( Beets Soup)
2 lbs of beef, lean pork, or mix
2 average red beets
1/2 cabbage
4 little potatoes
1 carrot
2 tsp. tomato paste
1 tsp. vinegar
1/2 tsp. sugar
1/2 butter stick
salt and pepper, to taste
parsley
dill
green onions
Put beef, or pork, or mix of meats into a large saucepan and cover with 3/4 gallon of cold water. Bring to a boil and reduce heat. Remove the grease froth from the broth surface with a spoon. Cook at low heat for 1-2 hours.
While it is cooking,prepare the vegetables.
- Simmering Red Beets-
Cut red beets into thin sticks and add them into the pot. Simmer at low heat for 1 hour. If there is not enough liquid, add some broth. After it is done, add 1 spoon of vinegar and 1 spoon of sugar to keep the beautiful beets color. Cover the pot and remove from the heat.
- Pan-frying Vegetables-
Put some butter in a frying pan. Add chopped onions and carrots that are cut into thin sticks. Mix with tomato paste. Cover and saute for 15 minutes, stirring occasionally.
- Cut potatoes in small cubs
- Chop green or red cabbage
Heat broth to boiling. Add cube cut potatoes. Cook for 15 minutes. Add chopped cabbage . Cook for another 10 minutes. Add simmered red beets. Cook another 5 minutes. Add saute mix,continue to cook for another 3 minutes,stirring occasionally. Add salt and black pepper. If you like garlic, you can add some grated garlic.
Serve with sour cream and some chopped parsley,dill and green onion spread on the top.
